Origin
Around the start of the nineteenth century, the eclair was created in France. The French term for lightning is “éclair.” The shiny appearance of the pastry after being glazed with confectioner’s sugar is said to have inspired the name. Marie-Antoine Carême, a renowned pastry chef for the French nobility, is credited with creating the first eclairs. Pastry chefs use choux dough to create oblong pastries that are filled with cream and iced with chocolate to create éclairs.
