However, there are several other origin stories surrounding this beloved cake. Some argue that the cake’s name, Black Forest, is a metaphorical reference to the dark, loamy moisture of the deep, shady forest. Others believe that the cake resembles the bollenhut costumes with red pom-poms that women use for traditional dances in the region.
But perhaps the most modern origin story comes from Josef Keller, the manager of the Café Agner in Bad Godesberg. It’s said that he invented this cake at his restaurant in 1915, and it quickly became a hit among his customers.
Although it’s a German specialty, the Black Forest Cake is also considered a traditional dessert in Austria, Switzerland, and Italy. It’s prepared with few variations, but the use of dark wild cherries is a must.
